Dijon chicken with herbed mushrooms

- 4 small cutlets Chicken breasts patted dry
- 1 tsp Kosher salt
- ½ tsp Black pepper
- 1 tbsp Olive oil
- 2 tbsp Butter
- 12 oz Cremini mushrooms sliced
- 1 large Shallot finely chopped
- 2 cloves Garlic minced
- 2 tbsp Dijon mustard
- 1 cup Chicken broth
- 2 tsp Fresh thyme leaves picked
- 1 Lemon juiced
- 2 tbsp Fresh parsley chopped

Season the chicken with the salt and pepper. Heat the olive oil and 1 tablespoon butter in a wide skillet over medium-high heat.

Cook the chicken for 3–4 minutes per side, until golden and nearly cooked through. Transfer to a plate.

Add the remaining butter and mushrooms. Cook for 6–7 minutes until browned, then add the shallot, garlic and thyme and cook for 1 minute.

Stir in the broth and Dijon and simmer for 3–4 minutes. Return the chicken and any juices to the skillet and cook until the chicken reaches 165°F.

Stir in 1 tablespoon lemon juice, taste for seasoning and finish with parsley.
